Olive Garden’s Fettuccini Alfredo

I love Alfredo sauce and this is one of the best I’ve found. A friend passed along this recipe years ago, it is simple, rich, flavorful and not shy on the calories, which are all definite musts for alfredo!

1/2 cups real butter
2 cloves fresh garlic, minced
1 dash cayenne pepper
2 cups heavy whipping cream
2/3 cup fresh grated parmesan or romano cheese
salt and fresh cracked black pepper to taste
12 oz fettucini pasta
chopped fresh parsley for garnish (optional)

In a saucepan over medium-low heat, melt butter. Add garlic and saute for a minute, or until fragrant but not brown. Whisk in cream, then season with salt and pepper and a dash of cayenne. Simmer for 20-30 minutes, stirring frequently until thickened. During the last 10 minutes or so, boil fettucini in a seperate pot according to package directions. Remove sauce from heat and stir in cheese until melted and smooth. Serve over hot pasta and seasoned grilled chicken (optional).
