I have a relentless sweet tooth. It’s bad. Sometimes (okay, more than just sometimes) I get the craving for cookies, but the problem is that it takes time to make a whole batch, the kitchen is usually a disaster zone afterwards because I have little hands that insist on helping (which I actually enjoy. Sometimes.) and then with so many cookies I end up eating way more than I should. I always plan to package them up and take them to the neighbors, but if we’re being honest, 99% of the time we end up eating them all ourselves. Naughty, naughty. So this little gem is just what I need. A hot chewy cookie in no time at all with only a single mug to wash, and just the right amount for portion control. And the kids think it’s just about the coolest thing ever. It’s also the perfect late night treat when your husband is out of town and New Girl is waiting for you on Netflix. Which is exactly what is on the agenda for tonight. What about you?
1 Tbs butter (or more)
1 Tbs sugar
1 Tbs brown sugar
1/8 teaspoon vanilla
1 egg yolk
3 Tbs flour
1 Tbs mini chocolate chips (or more 🙂
In your mug, melt butter in the microwave (about 25 seconds). Add sugar, brown sugar, vanilla, and salt. Stir. Separate egg yolk and add yolk to the mug, stir. Gradually stir in flour until smooth then add chocolate chips. If it’s too dry or crumbly add a little more butter, you want it to be the consistency of cookie dough. Microwave on high for 45-60 seconds. It depends on your microwave, you want the egg to be cooked, but don’t over cook or the dough will become hard and dry. Best served with a scoop of vanilla ice cream and drizzled with chocolate syrup.
